Cupcakes Galore
Yesterday was a long day. Dannielle woke up early and did some baking. Then she went to work. Andre worked on the walipini greenhouse. Which is a slow and torturous process. Mostly because until we get the ranch profiting off of itself, we are both working. Then after dinner and family time, we decorated and boxed cupcakes into the wee hours of the morning.
We only did two different cupcake boxes. Our popular Raza box and our new citrus box. And we did a custom order. Our Raza box has a calabaza en tacha (pumpkin cupcake with piloncillo cream cheese filling and and pilonchillo frosting topped with pepitas), mangonada (mango cupcake with mango filling, and a mango chili frosting, topped with chamoy and tajin), Azteca hot chocolate (Ibarra hot chocolate cupcake with spicy dulce de leche filling and vanilla frosting topped with chili powder and a pepper), and a gansito (vanilla cupcake with strawberry filling, vanilla frosting, dipped in chocolate). Our Citrus box has a peach lemonade (lemon cupcake with peach filling, peach frosting, topped with lemon zest and a dried lemon slice), pineapple dole whip (pineapple cake with pineapple filling, vanilla frosting topped with a pineapple flower), orange creamsicle (orange cupcake with orange marmalade filling, vanilla frosting, topped with orange zest and a candied orange slice), and a cherry limeade (lime cupcake with a dark cherry filling, cherry frosting, topped with lime zest and a dried lime slice).
We also did a box of just strawberry lemonade. It’s a lemon cupcake with strawberry filling, strawberry frosting, and a candied lemon slice with lemon zest on top.
Thank you to everyone who has been supporting us through cupcakes. Dannielle has been baking as a hobby for over 20 years. Her grandmother called it stress baking, so that we don’t kill the men in our lives. LOL. Her passion for using all edible, not from a box or can or jar recipes is fabulous. But it is also time consuming. So thank you and we hope you continue to enjoy our cupcakes.
